Frugal Recipes: Buttery Garlic Cheese Biscuits
The scent of fresh bread always reminds me of my grandmother’s kitchen and Sunday afternoon meals after church. That undeniable scent holds the memories of some of the happiest times in my life so it is no surprise that I am a huge bread freak and I will eat it in just about any form you can imagine.
This recipe yields some of the most delectable garlic cheese biscuits I’ve ever had, and the best part is that they are inexpensive and simple to make.
INGREDIENTS
• 1/8 cup butter or margarine
• 1/8 cup olive or vegetable oil
• 1 teaspoon finely minced garlic
• 1 teaspoon finely minced fresh parsley
• 1 ½ cups baking mix
• ½ cup finely shredded sharp Cheddar cheese
• ½ cup milk
INSTRUCTIONS
1. Preheat the oven to 400 degrees.
2. Melt the butter in a small saucepan and add the garlic, cooking for about 30 seconds, just long enough to soften the garlic. Stir in the parsley and remove from heat.
3. In a bowl, combine baking mix, cheese and milk until well blended. (This will be a thick mixture)
4. Flour your hands (using a bit of baking mix) and pinch off portions about the size of a golf ball. Roll it to form a ball and flatten just slightly.
5. Dip the balls in the garlic butter mixture and place on a baking sheet about an inch apart.
6. Bake for about 10 minutes before brushing the tops with the remaining garlic butter.
7. Return to the oven for about 4 – 5 minutes or until golden brown.

What can I say that this recipe doesn’t say for itself? These biscuits are so tasty that you will probably want to double the recipe next time.
